Dining along the wild Ayrshire coast has reached new heights with the opening of Tides and Sirens at Seamill Hydro. These two destination venues offer guests contemporary all-day Scottish dining, afternoon teas, Champagne by the glass, signature cocktails, and small plates, all while enjoying sweeping sea views of the Firth of Clyde.

Tides Restaurant: Modern Scottish Dining with Panoramic Views

Tides, the hotel’s new 180-cover all-day dining restaurant, serves a menu of modern Scottish flavours in a setting framed by floor-to-ceiling panoramic sea views and timeless surroundings. Open daily until 10pm, the kitchen is led by head chef Andrew Heaney, who has crafted a locally sourced menu featuring classic dishes and signature showstoppers. Highlights include the decadent Scottish seafood two-tier tower, perfect for sharing, individual beef Wellingtons, chimichurri-grilled chicken, extensive seafood options, coal-roasted chargrilled meats and burgers, classic pies, seasonal starters, and indulgent desserts.

The drinks list complements the menu with world wines, draught craft beers, and cocktails. One of Tides' most distinctive design features is a custom underwater mythical mural, serving as a dramatic focal point. The interiors echo the moon’s influence on the sea, with a coastal-inspired colour palette and a buzzing social atmosphere that changes with the tides—from crashing waves at breakfast to sunset-lit dinners.

Sirens: Intimate Champagne and Cocktail Lounge

Adjacent to Tides, Sirens is an intimate Champagne and cocktail lounge accessed through an illuminated archway that opens into a stylish, speakeasy-inspired space. Open from noon until late, every corner tells a story with atmospheric lighting and elegant architectural features. The glamorous setting offers a curated selection of classic cocktails, including a Neptune Gin Martini and Spritzes, alongside inventive signature serves.

Guests can enjoy Laurent-Perrier Champagne by the glass, with the option to add Kings of London caviar. There is also an extensive no- and low-alcohol section and a dedicated small-plates menu designed for relaxed, social dining. Flooded with natural light during the day and softly glowing by night, Sirens looks across the gardens toward the Ayrshire coastline, providing a beautiful space to gather before or after dining at Tides.
