UK distillery Zymurgorium enters administration after decade

A major UK distillery has collapsed into administration after a decade in business. Zymurgorium, which was founded by Aaron Darke in 2013, stopped trading at the end of 2025 after dealing with financial difficulties.

As of April 13, Nicola Clark and Steven Illes of MHA were appointed as joint administrators, with a notice published on The Gazette. Zymurgorium's website describes the alcohol company as holding a range of premium spirits including gins and liqueurs, as well as rums, tequilas, and vodkas. Some of the goods sold by the company can be found at Tesco, while B&M has previously been spotted selling the drinks.

The company also operated a bar dubbed Project Halcyon in Manchester, but back in February the joint announced it had 'poured its last cocktail.' A statement on Instagram read: 'Project Halcyon has poured its last cocktail. It was with sincere regret that due to unexpected challenges at the ownership level we must close our doors for the foreseeable. Though we say goodbye, the memories live on. Thank you to everyone who shared in our craft, our community and our story.'

It is not known what the future of the site is to look like just yet, however, a report from the Hackney Gazette claims the bar is set to open again shortly - with a new buyer said to have been found. Ms Clark said: 'We are pleased to have been able to sell the assets of the popular Project Halcyon bar in the St John area of the city to a third party which will mean that its doors will shortly be opening again. We are also actively exploring the sale of the trademarks and the recipes of Zymurgorium which made it such a distinctive brand.'
