A Birmingham-based chef, inspired by the global success of Ben & Jerry's, is carving out her own niche in the frozen dessert market with a range of uniquely creative and 'never ordinary' ice creams.
From Personal Craving to Thriving Business
The venture, named Nica's, was born from a very personal moment for Aston resident O'Nica Kirnon. While undertaking a liquid fast, she experienced a powerful craving for coconut ice cream. Her inventive reasoning was that it could technically be considered a liquid. "I had to cave in," she admitted to BirminghamLive. What began as a personal treat quickly garnered attention from friends and family.
"Other people started trying it and it began to do well, so I started making other flavours," O'Nica explained. She insists she had no initial business plan, simply pursuing a passion. However, that passion has now solidified into a promising local enterprise that she is thoroughly enjoying.
Flavours That Defy Convention
True to its tagline, Nica's ice cream is deliberately unconventional. You won't find standard chocolate or strawberry on the menu. Instead, O'Nica focuses on distinctive creations that pack a flavour punch. Her offerings include inventive varieties such as pistachio, apple crumble, and strawberry cheesecake.
"I don't have vanilla for a reason and try to make flavours unique," she stated, emphasising her commitment to standing out from mainstream offerings. Every batch is prepared with a homemade touch, which she believes translates directly into superior taste. "Because I'm homemade, the ice cream is prepared with passion and love," O'Nica added.
Big Plans for a Local Favourite
The year 2026 is shaping up to be a significant period of growth for Nica's. The Birmingham business has plans to expand its presence by catering for street food events and weddings, bringing its unique products to a wider audience.
O'Nica is a firm advocate for the quality and value of independent food producers. "When you're supporting local, you're supporting someone who loves what they do," she said. "People want to see you win and you're helping someone grow in the community."
While she draws inspiration from giants like Ben & Jerry's and expresses a desire to reach a similar level of recognition, O'Nica is determined to maintain her brand's authenticity. "If people love Nica's now, I don't want to change anything if I ended up selling to supermarkets," she affirmed.
