Cooking influencer Anthea Malialis, known as the Jacket Potato Queen, has unveiled a mouth-watering Chicken Caesar jacket potato recipe from her new cookbook, Super Home Cook. The dish combines a crispy potato skin with garlicky mash, creamy Caesar chicken, crunchy lettuce, crispy bacon, herby pitta croutons, and a generous grating of Parmesan.

How to Make the Perfect Chicken Caesar Jacket Potato

This recipe serves two and takes about 75 minutes from start to finish. Preheat the oven to 200C (180C fan, gas mark 6). Pierce two large baking potatoes with a fork, brush with olive oil, season with sea salt, and wrap in foil. Bake for 50-60 minutes, then remove the foil and cook for another 15 minutes to crisp the skins.

While the potatoes bake, season two chicken breasts (or eight mini-fillets) with one tablespoon of dried Italian herbs, one tablespoon of garlic granules, and a drizzle of olive oil. Pan-fry until golden and cooked through, then let cool and slice. Mix with four tablespoons of Caesar dressing and set aside.

For the croutons, cut one pitta bread into small squares, spray with olive oil, and season with Italian herbs. Bake on a tray for six minutes until golden and crisp.

Assembling the Dish

Once the potatoes are done, cut them open and mash the inside with two tablespoons of garlic butter. Season with salt and pepper, then grate over some Parmesan. Spoon over the Caesar chicken mix, add shredded iceberg lettuce, crispy bacon pieces, and the pitta croutons. Drizzle with the remaining two tablespoons of Caesar dressing and finish with an extra grating of Parmesan. Serve immediately for the perfect crisp, creamy, cheesy bite.
