Spicy Taco Beef Stuffed Sweet Potato with Hot Honey

This recipe from Super Home Cook serves two and combines crispy sweet potatoes with spicy taco beef, cottage cheese, avocado, and a drizzle of hot honey. Malialis calls it “absolute dinner goals!” The ingredients include 2 large sweet potatoes, 2 tbsp olive oil, sea salt, 400g lean beef mince, 25g taco seasoning, 1 tbsp tomato purée, 1 tsp paprika, 1 tsp garlic powder, 1 tsp adobo seasoning, 1 tbsp butter, a handful of grated mozzarella, 1 avocado (diced), and 300g fat-free cottage cheese. For the hot honey, you'll need 3 tbsp honey, ½ tsp chilli flakes, ¼ tsp garlic powder, and ¼ tsp paprika, plus rocket leaves and extra chilli flakes to serve.

To prepare, preheat the oven to 200C/180C fan/gas mark six. Pierce the sweet potatoes with a fork, rub with olive oil and salt, and bake for 45 to 60 minutes until soft—air-frying is also an option. Meanwhile, cook the beef in a pan over medium heat until browned, then add the taco seasoning, tomato purée, paprika, garlic powder, and adobo seasoning, stirring for a few minutes until fragrant. Mix all hot honey ingredients in a small bowl; warming it in the microwave for five to 10 seconds makes drizzling easier. Once the sweet potatoes are done, cut them open, add butter and mozzarella, pile on the beef, and top with avocado and cottage cheese. Drizzle generously with hot honey, finish with rocket, and serve with extra chilli flakes if desired.
