Maki and Ramen, a chain known for its quick-serve ramen and sushi, has announced that it will open its newest branch in Birmingham on Friday, August 21. The restaurant has spent most of 2026 transforming the ground floor of King Edward House, a historic building on New Street.
This will be the 21st branch of the chain and the sixth to open this year. Inside, the restaurant will seat 120 people and offer a menu that is largely halal, with a substantial vegan range alongside traditional Japanese dishes such as gyoza and katsu curry.
Founder's vision for Birmingham
Founder Teddy Lee expressed enthusiasm for the location: "Birmingham is an amazing area for us, with a vibrant scene and engaging culture - we know this will be a hit with all residents." Maki and Ramen first launched in Edinburgh 11 years ago and has built a reputation for its quick-serve ramen. Teddy added: "Our noodles are handcrafted, and our broth is simmered for eight hours to achieve that deep, rich flavour that defines authentic ramen."
Restaurant design and offerings
The restaurant will feature an open-plan layout with warm lighting and neon accents, which the brand describes as a nod to classic ramen-yas. The basement will serve Japanese beers, cocktails, and tea-based drinks, and there will also be outdoor seating. Teddy commented: "People want somewhere they can sit, relax, and enjoy a proper meal either for lunch, afternoon or dinner for an affordable price. That's exactly what we're here to offer."
Maki and Ramen is one of five new sushi restaurants opening in Birmingham city centre this year, joining venues near Pigeon Park, on the Paradise Development, in the Bullring, and in Grand Central. The restaurant will be located at King Edward House, 134B New Street, Birmingham, B2 4NS.
