A classic chicken pie has been given a revolutionary twist by food content creator Ed Cudlipp, whose chicken Kyiv-inspired bake has gone viral on TikTok. The dish replaces traditional pastry with a creamy chicken filling, topped with smooth mashed potato and finished with a golden crispy crunch.
What Makes This Pie Different?
Cudlipp describes his creation as: "Diced chicken thigh meat in a rich garlic, parsley, and butter sauce, topped with smooth mashed potato, and finished with a golden 'crunch' of crispy chicken skin and deep-fried panko. All the flavours of Kiev, turned into the ultimate comfort pie." The key upgrade lies in the sauce, where a basic béchamel is elevated with white wine, Dijon mustard, garlic, parsley, and lemon juice to recreate the buttery, garlicky centre of a chicken Kyiv.
How to Make Chicken Kyiv Pie
Ingredients
- 800g skin-on, bone-in chicken thighs
- 150g butter
- 1 large brown onion, chopped
- 12 garlic cloves, minced
- 2 tbsp plain flour
- 400ml chicken stock
- 50ml white wine
- 250ml double cream
- 2 tbsp Dijon mustard
- 8 tbsp chopped parsley
- Juice of ½ lemon
- 1.2kg potatoes
- 3 egg yolks
- Chicken skin (reserved from thighs)
- Panko breadcrumbs
Method
- Remove skin from chicken thighs and set aside. Dice the meat and brown in batches.
- In the same pan, melt 50g butter, then soften the onion and minced garlic.
- Stir in flour, cook for two minutes, then slowly add chicken stock and white wine. Simmer until thickened, then stir in 100ml cream, Dijon mustard, parsley, and lemon juice.
- Combine with browned chicken. The chicken will cook through in the oven.
- Boil potatoes, then mash until smooth. Stir in 100g butter, 150ml cream, and three egg yolks. Season well.
- Spoon filling into a dish, top with piped mash. Bake at 200°C for 30 minutes until golden.
- Lay reserved chicken skin flat between two baking trays and bake until crisp. Deep fry panko breadcrumbs until golden.
- Combine with flaky salt. Scatter over pie after baking for that signature Kyiv crunch.
In a video titled 'The classic Chicken Kiev, reimagined as a pie', Ed promises the result gets both flavour and texture right. He said: "It's amazing, it's a perfect consistency and it tastes exactly like a Kyiv filling."
